Frederick’s Steakhouse & Pizzeria is a concept developed by: Fred M Waelter, the namesake, and longtime, well known local businessman responsible for businesses like “Bandag” tire manufacturing/distribution company, Noah’s Ark”, well known restaurant/ bar, St Charles, MO., “The Boardroom” restaurant/bar in Clayton, MO., Just to name a few. and Randy Waldman, Longtime restaurant owner/operator known for “The Coal Hole” in Clayton, MO., “The Daniele Hotel “, Clayton, MO. and “Xanadu Restaurant” in Chesterfield, MO. to name a few. Together, Fred (Frederick) and Randy bring “Value priced” Steaks, Pizza and a well rounded menu to you with service.

Fred Waelter and Randy Waldman are old-school in ways you don’t see much anymore: They are relentless about quality, value and customer service—whether it’s given or received.
So, when it came to remodeling their new restaurant, Frederick’s Steakhouse & Pizzeria at 12490 St. Charles Rock Road in Bridgeton (near Hwy. 70 and St. Charles Rock Road), first thing they did was hang a giant sign at their window saying, “100-percent UNION JOB.”

There are steak & seafood restaurants, steak & pasta restaurants—there’s even a chain called Quaker Steak & Lube--but not a lot of steak & pizza restaurants. But the concept makes sense.
Just ask Randy Waldman, local food and beverage consultant and restaurant veteran, who along with partner, local businessman Fred Waelter, is opening Frederick’s Steakhouse & Pizzeria at 12490 St. Charles Rock Road in Bridgeton, the former Meglio’s Italian Bar & Grill. (Meglio’s, the subject of a first season episode of Restaurant: Impossible in February 2011, closed quietly in late December 2014.)

Frank Sinatra greets you at the front door. He tips his hat at you and suggestively smiles but doesn’t say anything. Jerk.
Well, maybe you shouldn’t be surprised considering his burger recipe — preserved for posterity, like all recent cultural detritus, online — was ordering Dean Martin to make him a burger and then drinking Martin’s 2 oz. bourbon shot — or maybe the whole bottle. Like all great chefs, Sinatra leaves his recipe open to interpretation.
